Master Chef Hal,a member of Iron Chef All Stars in Japan, serves New Japanese Robata Cuisine at HAL YAMASHITA Napa. He futures fabulous a la carte with Japanese Umami,Shabu-Shabu,Sukiyaki,Tempura and Sushi by HAL YAMASHITA methods.


A native of Kobe Japan. A graduate of Osaka University of Arts, Faculty of Arts Degree.

Chef Hal is known as Maestro of contemporary Japanese cuisine in Japan. He is the very person who made the new category called “Shin -Washoku”. “Shin”means “New” in Japanese. In recent years, category of Shin-Washoku” become widely established.


Award winning Chef Hal focus on potential of the ingredients for his cuisine.  His cooking philosophy is to enhance the natural flavors of the ingredients through a careful selection of flavor combinations and condiments. He integrates a new technique into his cuisine. Chef Hal’s Shin-Washoku has his own philosophy.

Volunteer Activities

Supported"2008 United Nations World Food Program WFP" -activities with a focus on food for young children. Became WFP association adviser from 2010.

Launched a charitable fund raising drive " Hal Yamashita drinking water " for the victims of the Great East Japan Earthquake in 2011

He is currently in TV commercial for NESCAFE.



In 2016 , his first cookbook” Mochi Mugi Diet Recipe”

    From the first day of release, top the best seller list .

This cookbook has a circulation of 130,000
